Allergen and labelling guidance
You must be able to provide accurate and up-to-date information about the 14 allergens.
It is a legal requirement to have this information in writing if you directly sell or provide food to your customers. There are several ways to do this:
- retaining labels
- using an allergen matrix
Depending on the method you choose, you must always make sure that information is kept up-to-date as manufacturers may change their ingredients.
